We are using an Olympus WAS-331M Digital Voice Recorder for interviews for an academic research project, and found that some interviews needed to be done by phone. At first I was surprised that Olympus' telephone recording device was an ear-bud instead of attaching to the phone cord. Then I realized what an improvement it was - you can use it on a cordless phone, a cell phone, or a call over a computer through the internet! The sound quality is great - or as good as your phone connection, anyway.
Two notes: (1) It comes with two adapter jacks, but the instructions are minimal to figure out which to use. (2) Make sure to plug the jack into the recorder's "mic" plug, not the "ear" plug. It will still record if plugged into the wrong jack, but the sound quality will be terrible.

I don't have a lot of experience with this type of equipment, but I found this product to be easy to use. I got it to record academic research interviews conducted by telephone, and it works great for that purpose. This inexpensive microhone goes in your ear and allows you to record phone conversations over any kind of phone (including cellphones, home phones or payphones) without any adapter. It feels like any earbud for an MP-3 player and does not degrade the sound quality of the conversation. I've owned two of these (I had to replace the first because my cat chewed through the wire) and they work very well in my Sony miniature digital recorder. The recording is very clear and there's no interference with the phone connection.
There are two downsides to this microphone due to it's shape and placement in the ear. First, it is very uncomfortable in the ear, especially when phone is pressed up on it.
Second, the microphone is very sensitive and picks up the sound of the phone's slight movements against it.
That being said, it really is very effective.
Even though my recorder records in stereo, this monaural microphone works well with it.
